Vegetable Highlight: Zucchini Bread for Dessert?

As an exercise in thinking through nutritious alternatives for desserts, let's talk about zucchini bread. Dessert for me needs to be dessert. I usually do not get excited about desserts that have major changes in the ingredients, making them healthier. Don’t get me wrong, I can enjoy a good zucchini bread but don’t be fooled into thinking you are eating healthy food when eating something like this. There are some benefits and also some drawbacks to this alternative.

Pros:

  1. Nutrient-Rich - Zucchini is low in calories and contains nutrients like vitamin C, vitamin A, potassium, and folate. When incorporated into bread, it adds these nutrients, enhancing the bread’s overall nutritional profile.
  2. Higher Fiber content - Zucchini is a good source of dietary fiber. We highlighted the benefits of fiber last month but as a reminder, fiber helps digestion, helps maintain healthy blood sugar levels, and promotes a feeling of fullness.
  3. Moisture and Texture - Zucchini adds moisture to the bread, reducing the need for added fats like oil or butter. This can lower the overall calorie content while still producing a soft, moist texture.

Cons:

  1. Added Sugars - Many zucchini bread recipes call for significant amounts of sugar, which can counteract the health benefits.
  2. Refined Flour: - Traditional zucchini bread is often made with refined white flour, which lacks the fiber and nutrients found in whole grains.
  3. High in Calories - Depending on the recipe, zucchini bread can still be calorie-dense, especially if it includes added sugars, oils, nuts, or chocolate. This brings me back to the point of portion control. Just because it has zucchini doesn’t mean you can have endless amounts of it.

Should you swap zucchini bread for another dessert you regularly consume? Maybe—but consider the facts above and make an informed decision that acknowledges what you are gaining and what you are losing. It might be a perfect swap for you that helps you fend off the sweet tooth.
